“You’re overqualified for this position”

What does this really mean? Even if someone has a lot of experience, won’t they just likely do a job that much better? Assuming I still want the job, is there any way to respond to this that improves my chances of getting it (or at least keeping the conversation going)?

I just had an interview yesterday for a midlevel position and when I asked if the interviewer had any concerns about my experience as a fit for this role, they told me they worried I was overqualified. However, I still really want the job. How can I respond? (In the moment I just said I don’t have any concerns about that personally, but I am crafting a thank you/follow up email now and am hoping I can be a little more eloquent.)
